The best thing to do is draw the curtains and think of spring and renewal. Even better is to turn one’s hand to a different endeavor, a cultivation of the body through culinary delights : a flirt with taste, so to speak. So we propose a fine meal; the best are shared with a good friend, or lover. The Aperitif: where romance begins and the mood is created. It is upon this seemingly insignificant detail that the success of the whole will hinge. A good first impression is of paramount importance. A dry - martini appeals to some or a pink lady may speak to others. Harvey Wallbangers and Bloody Mary’s are definitely out unless you are heavily insured. Food and music go hand in hand, but the music must not be intrusive. A warm Straussian Waltz brings out the best , succeeded by Debussey or Bach (unless you are inclined to debauch). The Appetizer: the first titillation of the tastebuds Once again correct preparation is as vital as a positive approach . Soup or salad - each has it’s advantages and it’s disadvantages. For pure sensual- ity though, we suggest steamed mussels (which car- ries the relief of allowing you to pass by the meat market). A dozen should be enough to whet the appetite. Choose a medium size, neither so small as to be unencouraging nor so large as to over-burden the appetite too early on in the meal. The Entree: the main act following the appetizing overture and considered the height of the meal. Liver should be avoided as it is emotionally taxing; tongue, due to it’s verbal nature , may be physically exhaust- ing. The amount is an important consideration. Despite good taste “surfeiting ,the appetite may sicken and so die.” * Ideally, a light nibble is all thatisneeded. No one can refuse a delicate Duck a l’Orange ona bed of wild rice. A succulent , irresistable union of flesh and fancy is deliciously accentuated by the lus- | cious flowering leaves of an artichoke. Each leaf,as | it is separated from the body , is savoured on it’s own until the soft ,tender heart is revealed. A saucy toucn of orange envigorates the whole experience. The greatest compliment is described by a rich , full | bodied wine that harmonizes with the vibrant melody ~ of taste. Finally with a quick smack of the lips,the | whole symphany of Bacchus ends. The Dessert: a fine performance stands alone and anything else may seem an obligation. But ina tour de force of this nature a simple Poire Helene is a most appropriate encore.
